These days, with the onset of rains, the demand for Mirchi Badas has increased to a great extent in Pali. People are reaching in queues to eat hot Mirchi Badas. Mirchi Bada lovers are not only in Pali but also in the country and abroad. Even a Mirchi Bada festival has been held in London. If you see this Mirchi Bada once, you will be so tempted that you will not be able to leave from here without eating it.

The taste is so tasty that there is demand in every season
Be it winter or summer, heavy rain or thick fog, all the namkeen shops of Pali are crowded. But especially if we talk about the taste, Medatia Sweets of Pali is something different. Here people wait for their turn to eat Mirchi Bada, when hot Mirchi Bada will come out so that they can eat it and fill their stomach.

Sales triple in the rain
Jagdish, who makes Mirchi Bada at Medatia Sweet Home in Pali, said that on normal days 5 to 10 thousand Mirchi Bada are sold. However, during the rainy season, the number increases two to three times. Along with Mirchi Bada, people here like Onion Kachori and Onion Kopta as well. Jain masala is also specially added to it so that Jains can also eat it.

There is no corner where this Mirchi Bada is not available
However, there is no corner of Pali city where Mirchi Bada is not sold. There is a huge crowd of its lovers at every shop. Customers wait for hours to eat hot Mirchi Bada prepared after stuffing potato masala in fresh green chillies, dipping it in gram flour batter and frying it in oil.

This is how this Mirchi Bada is made
Potatoes are boiled, mashed and spices like salt, chilli, asafoetida, mustard, coriander seeds etc. are added as per taste and then mixed. Finely chopped onions, mint and coriander leaves are also added. The masala is prepared by adding cashew pieces to the masala. Whole big green chillies are taken, cut with a knife and filled with potato masala. Gram flour batter is prepared in proportion to the number of chillies.

Salt and chilli powder are added to the gram flour batter as per taste. The chillies stuffed with spices are dipped in the gram flour batter and fried in a pan of hot boiling oil. After frying it well, it is taken out of the pan and served for eating. Green and sweet chutney is also served to enhance the taste.

Doing business abroad
Mirchi Bada is famous only in Pali and Jodhpur, but the common recipe has spread its taste to every corner of the country. Today people make Mirchi Bada with great gusto at home too. Many people from Jodhpur have settled abroad, but they definitely take Mirchi Bada with them from here. Last year on 18 July 2020, migrant Rajasthanis settled in London organized a Mirchi Bada festival, in which more than 300 Londoners also tasted it.
